It seems like at every party there’s always chips and some kind of dip! I believe salsa get used at more parties than Guacamole, that’s probably why they aren’t talking right now! I love salsa just as much as the next man, probably more than Guacamole. But, that might just change after this awesome guacamole recipe….not really. Lets first start with a new salsa. I’m pretty sure, that if you ever made salsa before you probably proclaimed your salsa as the best salsa ever! But, lets go a new route…for your next party don’t make your self-proclaimed salsa. How about watermelon salsa? Sounds weird huh? But, the taste is liberating!

Watermelon Salsa

Ingredients

  • 2 cups finely chopped seeded watermelon (do not puree)
  • 1 cup crushed pineapple, drained well
  • 1 cup sweet onion, minced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup orange juice
  • 1/4 teaspoon hot sauce, such as Tabasco, or to taste

Directions

  1. Stir the watermelon, pineapple, and onion together with the cilantro, orange juice, and hot sauce in a bowl. Cover, and refrigerate at least 30 minutes before serving.

Wasabi Guacamole

Ingredients

  • 2 eggs
  • 2 ripe Hass avocados peeled and chopped
  • 1 onion, finely diced
  • 1 tomato, finely diced
  • 3 tablespoons fresh lime juice
  • 1 teaspoon hot pepper sauce
  • 1/2 teaspoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon wasabi powder
  • 1 green onion, thinly sliced
  • chopped fresh cilantro

Directions

  1. Place the eggs into a saucepan in a single layer, and fill with water to cover the eggs by at least 1 inch. Cover the saucepan, and bring the water to a boil over high heat. Once the water is boiling, remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water, then cool the eggs under cold running water in the sink. Peel and dice the eggs.
  2. Use a fork to mash the avocados in a large bowl. Stir in the hard cooked eggs, onion, tomato, lime juice, pepper sauce, Worcestershire sauce, salt, pepper, and wasabi powder. Mix well; taste, and add additional salt and pepper if necessary.
  3. Place guacamole in serving bowl, and garnish with green onion and cilantro. Cover, and refrigerate for 1 hour to allow flavors to blend.

Beer Margaritas

Ingredients

  • 1 (12 fluid ounce) can frozen limeade concentrate
  • 12 fluid ounces tequila
  • 12 fluid ounces water
  • 12 fluid ounces beer
  • ice
  • 1 lime, cut into wedges

Directions

  1. Pour limeade, tequila, water, and beer into a large pitcher. Stir until well-blended, and limeade has melted. Add plenty of ice, and garnish with lime wedges. Adjust with additional water, if needed.
